Couscous Salad with herbs de provence sea salt

Ingredients:

8 oz of couscous

8 oz of boiling water

½ oz of red onions, diced

1 oz of sweetcorn

1 oz of tomatoes, diced

1 oz of cucumber, diced

1 avocado, diced

1 tbsp of fresh parsley, chopped

For the vinaigrette:

1 tbsp of oil

1 tbsp of lemon juice

1 tsp of whole grain mustard

1 tbsp of honey

1 tsp of herbs de provence sea salt

 Instructions:

Boil 8 oz of water

Combine couscous and boiling water in a mixing bowl

Cover with a lid and let it sit for 5 minutes

Remove lid and fluff couscous with fork

Add in remaining salad ingredients to bowl and toss gently, set aside

Mix the vinaigrette ingredients separately in mixing bowl

Once combined, pour over couscous

Toss contents gently and serve
